One of the most popular meals I make is the Chipotle Chicken Cakes. Everyone who has tried them, loves them, and I have been reluctant to share my recipe, until now.
I originally got the recipe from the book, Easy Cooking, The Costco Way. However, over the years, I have modified the recipe to make it my own.
CHIPOTLE CHICKEN CAKES

FOR THE CAKES
3 pounds of boneless, skinless chicken breasts
1 cup of Chipotle Mayo (below)
1 cup of flour
5 eggs, beaten
1 container of panko, or bread crumbs
CHIPOTLE MAYO
2 cups of mayonnaise
1 tablespoon of lemon or lime juice
1 tablespoon minced garlic
1 tablespoon of onion powder
2-4 canned Chipotle peppers with a bit of adobo sauce (depending on how spicy you want it to be)
INSTRUCTIONS
1. Place thawed chicken breasts in a large pot, fill it with water.
Bring water to a boil and let the chicken cook till done all the way through. This can take any where from 30 minutes to 1 hour, depending on how high you have the stove set.
2. Once chicken is cooked, add a few of the breasts, and half the water, to a blender, and puree them. Repeat this process till all the chicken is done.
3. After chicken is pureed, dump it into a towel lined strainer.
Then wrap it up, twisting the ends of the towel to help squeeze out the water (careful, it will still be really hot, or you can wait till it cools down a bit).
4. In a large bowl, mix together all the ingredients for the mayo. Don't forget to chop up the chipotle peppers before adding them to the mix. When mixture is done, set aside 1 cup of it and place the rest in a pretty serving bowl (if you want too), then put it in the fridge.
5. In a large mixing bowl, mix together pureed/drained chicken with the 1 cup of mayo.
The mixture should be moist enough to still stick together when rolled into a ball. Use more mayo if needed, a tablespoon at a time (you don't want it you mushy).
6. Roll chicken into balls, and flatten them with you hand. A cake the size of your palm is what you should aim for, but you can make them smaller or bigger, depending on how many you want to make.
7. While gathering the flour, bread crumbs, and eggs into 3 separate bowls, heat up a pan full of oil till it is hot, but not smoking. Coat each cake with the flour, then the eggs, and then the bread crumbs.
Once covered, place the cakes in the heated oil, and fry them until they are golden brown on both sides.
8. To serve, arrange a few cakes on a plate, and place a dollop of mayo on each one.
